Thanksgiving Recap

Happy last day of November! What??? Is there seriously only 31 days left in 2011? Where has this year gone?!

We had a VERY busy Thanksgiving weekend! And I did a horrible job of taking pictures!

Wednesday night, Corby and I drove to China Spring to stay the night with his parents. Thursday morning we drove to Coolidge to have Thanksgiving lunch with his grandmother. After we ate, we drove to College Station just in time for the A&M vs. Texas football game Thanksgiving evening. Friday morning we woke up early and headed to Mason to the ranch... LOTS of driving!

I took zero pictures at Thanksgiving lunch. {boo me}

On Thanksgiving, A&M played Texas for the 118th and final time. I am bummed to see this tradition end and even more bummed that Texas beat A&M by 2 points. {Although, A&M played HORRIBLE the 2nd half... No surprise there.} It was still a great game and I'm so glad we were able to be there for the final game against Texas.

Guess it's true what the Aggie War Hymn says... "So long to the Orange and White..."

At halftime, the Longhorn Band presented A&M one of the flags that they flew during their halftime performance in 1999 in honor of those lost in the Bonfire Collapse. So amazing.
UT thanked A&M for 118 years of memories. Such an incredible moment.
The Aggie Band is always spectacular!

The only picture of us from Thanksgiving Day

We spent Friday through Sunday at my uncle's ranch in Mason, Texas. Ya'll, there is nothing like west Texas! Absolutely beautiful!

My view from the deer stand

the most beautiful sunrise
and sunset
and just for kicks... this is Lance Berkman's ranch that is right behind our ranch. {Lance Berkman used to play for the Houston Astros and now plays for the St. Louis Cardinals}

That's all for today. Lots of pictures.  :)  Happy end of November!

Peppermint Chocolate Chip Cookies

Hiii loves! I hope you all had a wonderful Thanksgiving weekend! We certainly had a wonderful weekend! (My weekend extended through yesterday, hence my hiatus)

I will have a full recap of the weekend tomorrow, but for now I have a yummy recipe to share!

Yesterday, I finished my Christmas shopping. Yes, I am DONE! And I did NOT venture out on Black Friday. I refuse. Anyways, I was in the Christmas spirit and decided to bake cookies! Peppermint chocolate chip cookies to be exact. And they are sooo YUMMY!

Peppermint Chocolate Chip Cookies

Ingredients:
2 Cups plus 2 Tbsp all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
12 Tbsp unsalted butter, melted and cooled until warm
1 Cup brown sugar, packed
1/2 granulated sugar
1 large egg plus 1 egg yolk
2 tsp vanilla extract
1/2 tsp peppermint extract
1 cup semi-sweet chocolate chips
1/2 cup chopped Andes Peppermint Crunch Bars (I bought them at Target in the Christmas candy section)

Directions:
Adjust oven racks to upper and lower middle positions. Preheat oven to 325 degrees. Line two cookie sheets with parchment paper.

Whisk dry ingredients together in a medium bowl; set aside. With electric mixer (or by hand) mix butter and sugars until thoroughly combined. Beat in egg, yolk, vanilla and peppermint extract until combined. Add dry ingredients and beat at low speed just until combined. Stir in chocolate chips and crushed peppermint.

Roll a half-cup of dough into a ball. Holding dough ball in fingertips of both hands, pull apart into two equal halves. Rotate halves 90 degrees and place formed dough onto cookie sheet with jagged surface facing up. Bake, reversing position of cookie sheets half way through baking, until cookies are light golden brown and outer edges start to harden, yet centers are still soft and puffy (approximately 11-14 min.). Do not overbake.

Because I am so thankful that you care to read my little bloggy, I am going to have my very first giveaway! More information to come this week :) Stay tuned!

Now to wrap up my thankful series!
Nov 24 - I am thankful for this cooler weather. The highs have been in the 50's and lows in the 30's! Really feels like fall now!

Nov 25 - I am thankful for the ability to buy food and clothing. This may seem silly, but there are soo many people who cannot afford to put food on the table, much less buy clothes. I truly am thankful for the clothes on my back and the food in our pantry/fridge.

Nov 26 - I am thankful for my husband. (I know I've already said that I was thankful for him, but hear me out) He constantly amazes and inspires me with how diligently he works for us. Things at his office have changed drastically in the past few months. And they will continue to change as his firm is looking at buying another firm. He hasn't complained at all, but I know that he's no longer as happy with his job as he was. I am so thankful for a hard working husband!

Nov 27 - I am thankful for my family's ranch. We have a 300 acre ranch in west Texas and I swear that west Texas is God's country! You've never seen a sunset until you've seen a west Texas sunset!!

Nov 28 - I am thankful for an extra day off of work! It was nice to recover yesterday from a weekend of driving all over Texas and finish up my Christmas shopping!

Nov 29 - I am thankful for my little craft business. It's by no means big enough to support our family or anything, but it gives me a little extra spending money and painting is my creative outlet!

Nov 30 - I'm thankful for each and every one of YOU! My lovely followers! Ya'll are the best!

Pinterloving: Thanksgiving Edition!

Hello ladies! Happy Wednesday {or should I say TGIF!}!! I get off at noon today and have the next 5 days off! Can I get a whoop?!

This is going to be a random post. Full of thankfulness, loves, Pinterest and more!

{i'm loving} that we get to see Corby's family tonight and tomorrow and we get to see my family tomorrow night and Friday!

{i'm loving} that tomorrow evening we get to watch Texas A&M beat the hell out of Texas for the last time! (ps. super lame that UT doesn't want to continue this 117 year long tradition) I'm also loving that I get to see Mrs. Amy Gougler TOMORROW!!! It's been wayyy too long!

{i'm loving} that Corby and I will be headed to the Ranch on Friday! Excited to do some hunting and also spend the weekend at my favorite place in the world (ya'll, there is nothing like West Texas!). The Ranch also happens to be the place that Corby asked me to marry him on November 28, 2009! :)

{i'm loving} that I have so much to be thankful for! We truly are so blessed!

  • Nov 22 - I'm thankful that my daddy is cancer free! (you can read here, here and here) He's still got a bit of a journey ahead of him, but he is cancer free and he's doing good! I am so thankful for him and love him with all of my heart!
  • Nov 23 - I'm thankful for the quality time that we will get to spend with our families this weekend! Family is so important to me, so there is nothing better than family time! :)
{i'm loving} that I will be baking this afternoon! I love anytime spent in my kitchen (as long as it doesn't involve doing dishes)!! I will be making a Pumpkin Snickerdoodle Cookies and Pumpkin Cheesecake!!
