Hiii loves! I hope you all had a wonderful Thanksgiving weekend! We certainly had a wonderful weekend! (My weekend extended through yesterday, hence my hiatus)
I will have a full recap of the weekend tomorrow, but for now I have a yummy recipe to share!
Yesterday, I finished my Christmas shopping. Yes, I am DONE! And I did NOT venture out on Black Friday. I refuse. Anyways, I was in the Christmas spirit and decided to bake cookies! Peppermint chocolate chip cookies to be exact. And they are sooo YUMMY!

Peppermint Chocolate Chip Cookies
Ingredients:
2 Cups plus 2 Tbsp all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
12 Tbsp unsalted butter, melted and cooled until warm
1 Cup brown sugar, packed
1/2 granulated sugar
1 large egg plus 1 egg yolk
2 tsp vanilla extract
1/2 tsp peppermint extract
1 cup semi-sweet chocolate chips
1/2 cup chopped
Andes Peppermint Crunch Bars (I bought them at Target in the Christmas candy section)
Directions:
Adjust oven racks to upper and lower middle positions. Preheat oven to 325 degrees. Line two cookie sheets with parchment paper.
Whisk dry ingredients together in a medium bowl; set aside. With electric mixer (or by hand) mix butter and sugars until thoroughly combined. Beat in egg, yolk, vanilla and peppermint extract until combined. Add dry ingredients and beat at low speed just until combined. Stir in chocolate chips and crushed peppermint.
Roll a half-cup of dough into a ball. Holding dough ball in fingertips of both hands, pull apart into two equal halves. Rotate halves 90 degrees and place formed dough onto cookie sheet with jagged surface facing up. Bake, reversing position of cookie sheets half way through baking, until cookies are light golden brown and outer edges start to harden, yet centers are still soft and puffy (approximately 11-14 min.). Do not overbake.

On another exciting note... My blog has reached 50 followers!!!!!!!!!!!!!! This is a big deal people!! I can't believe that this blog that I started almost a year ago has grown to 50 followers! Crazy!

Nov 24 - I am thankful for this cooler weather. The highs have been in the 50's and lows in the 30's! Really feels like fall now!
Nov 25 - I am thankful for the ability to buy food and clothing. This may seem silly, but there are soo many people who cannot afford to put food on the table, much less buy clothes. I truly am thankful for the clothes on my back and the food in our pantry/fridge.
Nov 26 - I am thankful for my husband. (I know I've already said that I was thankful for him, but hear me out) He constantly amazes and inspires me with how diligently he works for us. Things at his office have changed drastically in the past few months. And they will continue to change as his firm is looking at buying another firm. He hasn't complained at all, but I know that he's no longer as happy with his job as he was. I am so thankful for a hard working husband!
Nov 27 - I am thankful for my family's ranch. We have a 300 acre ranch in west Texas and I swear that west Texas is God's country! You've never seen a sunset until you've seen a west Texas sunset!!
Nov 28 - I am thankful for an extra day off of work! It was nice to recover yesterday from a weekend of driving all over Texas and finish up my Christmas shopping!
Nov 29 - I am thankful for my
little craft business. It's by no means big enough to support our family or anything, but it gives me a little extra spending money and painting is my creative outlet!
Nov 30 - I'm thankful for each and every one of YOU! My lovely followers! Ya'll are the best!
