I love {work}days that go by fast. {I wish weekend days/vacation days would slow down}
I have a yummy yeast-free recipe to share with you today! I made this recipe up in my little 'ol head. But it was delicious and healthy. Corby loved it!
Grilled Chicken and Zucchini Skillet
Ingredients:
3 boneless, skinless chicken breasts
2 large zucchini
1 tsp olive oil
1 (15 oz) can fire roasted diced tomatoes with garlic
1 (15 oz) cans of low sodium black beans, drained & rinsed
1 medium onion, diced
4 cloves garlic, minced
salt and pepper to taste
Directions:
1. Grill chicken breasts to your preference. (I seasoned mine with salt, pepper, garlic powder and paprika) Let chicken cool and cut into small pieces.
2. Heat olive oil in a large skillet over medium-high heat. Add onion, garlic and zucchini. Cook 5-7 minutes (until zucchini is tender but not soggy).

3. Add rinsed black beans and can of tomatoes (with juices) to the skillet.
4. Stir together and add chicken. Cover and cook for about 10-12 minutes.
5. Serve and enjoy!
