Greek Pasta Salad

Ello, lovelies!

I have a super easy and super yummy recipe to share with you!!

Greek Pasta Salad

For the salad:
16 oz pasta (I used rotini)
3 cups firmly packed baby spinach
1 cucumber, cut into 1/4 inch pieces
1/2 large red onion, diced
grape (or cherry) tomatoes, halved
1 cup pitted kalamata olives, halved (I used black olives)
6 oz feta cheese crumbles

For the dressing:
2 cloves glarlic, minced
1 tsp dried oregano
1 tsp Dijon mustard
1/4 cup red wine vinegar
1/2 tsp salt
1/2 tsp pepper
1/2 cup olive oil

Directions:
Make dressing: In a small bowl, whisk together garlic, oregano, mustard, vinegar, salt, pepper and olive oil until well combined.

Make salad: Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8 minutes, or as label directs. Drain, rinse under cold water and transfer to a bowl. Add remaining ingredients, toss with dressing and serve.

Looks super yummy! I love Greek flavors so I'll be trying this with my new gluten free pasta! Maybe it'll spice it up a bit!
