Long Weekend & Meal Planning

Hi friends!
The Monday after a 5-day weekend really sucks. 
I can't explain how hard it was to get out of bed this morning!

{my apologies in advance for the longest post ever}

Here's a brief recap of our long weekend:
We spent Tuesday night through Thursday afternoon in China Spring with Corby's family. It was a very relaxing few days filled with family and good food. Doesn't get much better than that!

Corby's family lives in a super small town outside of Waco, so of course on the 4th there were fireworks going off in every directions! It was a beautiful sight!

Thursday afternoon, we drove down to Bryan to surprise my daddy for his birthday!
His birthday isn't until July 16, but we won't be able to see him then. The rest of the weekend was filled with more family and more relaxing! It was wonderful!

My mom has the most amazing green thumb! Her back yard is beautiful. Filled with colorful flowers, a veggie garden and more! And she has decided to start raising butterflies. Sounds weird, but it's so neat!

Something else I want to touch on... Thursday, July 5, there was a funeral for Lt. Col. Roy Tisdale at my home church (Central Baptist) in College Station. I did not know Lt. Col. Tisdale, but he was an Aggie and proudly served our country. He was killed at Fort Bragg on June 28. My heart aches for his family.

 Prior to his funeral, the Westboro Baptist Church (if you are unfamiliar with WBC, google them) people put out a press release stating that they would be protesting his funeral. How could anyone protest someone's funeral? I'll never understand it. Well my fellow Aggies agreed and they formed a "maroon wall" around the church to keep protesters out of the funeral. I have never been more proud of my alma mater.

On a lighter note, I am going to start meal planning again! I know, I've said this before. Many times. But this time it's for real! And the lovely Carolyn at Life, Love & Puppy Prints is going to help keep me accountable!! :)

This week's meal plan:

Monday: Tilapia, Broccoli & Red Potatoes

Tuesday: our good friends from Houston will be in town so we are taking them out to dinner

Wednesday: BBQ Chicken Quinoa Salad

Thursday: Southwester Stuffed Peppers

Friday: Date night!

Saturday: Turkey Meatballs over Noodles
This is my own recipe. If I remember, I'll write it down so I can share it!

the westboro church has been protesting left and right, i am so sick of hearing about them. just leave the family would lost someone in peace and mind your own beeswax and yes i just acted like I am in 6th grade again with beeswax :-)

I don't often throw around the word hate, but I HATE Westboro..
They wanted to protest an OSU memorial after we lost 4 people in a plane crash last year. I just don't get it...

Westboro protests over practically everything, it's so annoying. You wouldn't believe how much their church gets vandalized. And you'd think they would get put under with the law, but most of them are lawyers. It's just really sad all around. I love it when people stand up to them to show support for the families who lost loved ones.

And your menu sounds delicious!!

LOVE the wall! The same thing happened in my
Hometown for a fallen soldier it was so heartbreaking and disappointing to see. I'm pretty sure I signed a petition against that group too!

I literally have cold chills. How DARE anyone protest a funeral. That's absolutely insane :(

Aside from that, sounds like a great 4th! I want that dessert!
