Our Weekend + A Recipe

Happy Monday!
And happy two-day work week to me!
{sorry, I'm not sorry}

This weekend was relaxing and wonderful!

Friday night, Corby and I had a date night! We got all dressed up and went to our favorite sushi place! We both LOVE sushi, but when we eat it, we go all out. And it's not a cheap meal. So sushi is a treat for us!


Saturday, we slept in and spent a good part of the day laying in bed watching season 1 of Mad Men. We had never seen the show before, but now, we are hooked! 

Saturday afternoon, I went to the grocery store. I've been dying to go to our new Trader Joe's, but since it opened there has been a looong line just to get into the parking lot and I just don't have time for that. So I will wait for the hype to die down.

Sunday morning, we went to church and Sunday school. 
Our church (First Baptist Euless) put on a wonderful patriotic service!

Sunday afternoon, we resumed our place on the couch to watch more of Mad Men.

Yesterday was July 1 which was a big day for Texas A&M!
We are officially a part of the SEC!! I can't wait for football season!
Texas is officially SEC country, y'all!

Last night I made my favorite recipe from my childhood: chicken and rice casserole. 

I posted the above photo on Instagram (@liajmayes) and several of you asked for the recipe. Well I don't have it written down, I know it by heart. So here it is:

Chicken & Rice Casserole
Ingredients:
8-12 bone in, skin on chicken legs (or thighs, wings, etc.)** 
3 cups of instant rice (I use brown rice)
2 cans cream of mushroom soup
1 can of cream of celery soup
1 soup can of milk
1 cup chopped fresh mushrooms (you can use canned)
1 packet of dried onion soup

Directions:
Preheat your oven to 325 degrees. Spray a 9x13 pan with non-stick spray. (Be sure to spray well, especially in the corners). Pour uncooked instant rice in pan. Spread evenly in the dish.

In a small pot over medium heat, combine the mushroom soup, celery soup, milk and chopped mushrooms. Stir until warm and completely mixed together. Once soups are combined, pour over rice. Use a spatula or wooden spoon to mix the rice and soup mixture together in the 9x13 pan. Be sure to mix well. Once rice is mixed in,  place the chicken legs on top.

Pour the dried onion soup in a small bowl. Stir well then sprinkle evenly over the chicken. Cover the dish with TWO sheets of foil and bake for 2 hrs - 2 hrs 15 mins or until chicken is cooked through!

**I cram as much chicken as I can in one 9x13 pan because this makes amazing leftovers
**You can definitely use boneless, skinless chicken breasts if you'd like. For this particular meal, it is not my preference.

The chicken and rice casserole looks delicious!! I make a recipe that is similar to that!
Trader Joes opened in The Woodlands and we went for the first time over the weekend...it was insane in there but so cool!!

I waited awhile to go to our TJ's when it first opened too. It's been open almost a year now and it doesn't matter when you go, it's always pretty busy. I try and go in the afternoon when it's not as crazy. So many good things in that store!!

I have friends who live off Hulen and say its a nightmare... I have not ventured down Hulen since it opened, but so want to soon!
