Happy Monday, ya'll! It is a beautiful day here in Fort Worth!
First things first, this so called "winter" is pretty darn amazing. I believe we have had maybe a handful of days where the temps have dropped below freezing. Lately, most days seem to have temps up in the 70's. Not really sure what's up with that. But I'm not complaining!
This weekend was fairly uneventful. Friday night, Corby and I went to the Fort Worth rodeo with his cousin Jeff and Jeff's girlfriend, Erin. We had a great time! I loooove the rodeo!

Like I said, I do love me some rodeo! But I'm afraid that the horses, hay, goats, other animals, etc. made my allergies HATE me! Saturday I stayed in bed most of the day because I felt horrible. I did get up long enough to do laundry and make dinner. Saturday was one of our cooler days this "winter". The high was only 50 and the low was about 30. So I decided to make chicken tortilla soup for dinner!
Chicken Tortilla Soup
Ingredients:
3 chicken breasts, cooked and shredded
1 1/2 cups chicken broth
1 1/4 cup water
1-2 tbsp olive oil
1 medium onion, chopped
4 cloves garlic, chopped
2-3 teaspoons chili powder, depending on preference
1 teaspoon dried oregano
1 28 oz can diced tomatoes, with juice
1 cup frozen corn
1 can white hominy, drained
1 can black beans, drained and rinsed
1 4oz can chopped greed chiles
1/4 cup fresh cilantro, chopped
grated cheese, sliced avocado, green onions, tortilla chips etc. for topping
Directions:
Cook chicken breasts to your preference. I planned in advance and placed frozen chicken breasts in my crock pot with water, chicken broth, salt and pepper for 4 hours on high. Once they were cooked through, I shredded the chicken and set aside.
Heat olive oil in large stock pot. Saute chopped onion and garlic until soft. Add chili powder, oregano, tomatoes, broth and water. Bring to a boil and simmer for 10 minutes.
Stir in corn, hominy, black beans, chiles, cilantro and chicken. Bring to a boil and simmer for 10 minutes.
Serve with grated cheese, sliced avocado, green onions or crushed tortilla chips. Whatever your preference. Enjoy!
Sunday morning I woke up to my alarm set for church and felt even worse than I did Saturday. I was so stopped up, sneezing/coughing and felt a migraine coming on, so I turned off the alarm and went back to sleep and slept until almost noon! That never happens! Corby got up and made us "breakfast" and we snuggled in bed most of the day watching The Wonder Years on Netflix.
I remember watching this as a kid and wanting to be Winnie Cooper soooo bad. :)
In other random news... I'm planning a trip to Houston in March to see all of my besties and to go to the rodeo! I'm hoping the weekend of March 17 to see Brad Paisley! But nothing is set yet!
Also, after praying about it, Corby and I have decided that we will wait at least another year before buying a house. We've decided at this point in our lives, it's not necessary to buy when we can continue to save and pay off some debt {darn student loans and Victoria's Secret card} :) But we are hoping to move out of the apartment we are living in and either rent a house or a townhome! We are praying that God gives us some direction or where we should live!
