Monday Meal Planning

Now that April is over {as of tomorrow}, Corby is officially done working late!
Praise the Lord! :)

My sweet, hard-working, diligent husband, worked 430 hours of overtime over the past 4 months! Yes, you read that correctly. 430 hours of overtime

Well, now that we will finally be back to a semi-regular routine, I can start meal planning again! And I am sooooo excited :)

Here's what's on the menu for this week:

Monday: Nothing. Corby has Bible study on Monday nights and doesn't get home until after 9. 
{this is when I do my grocery shopping}


Wednesday: Chicken Spaghetti
I don't have a recipe for this. It's a meal I've been making for years. 
I'll try to write it down as I go this week so I can share. 
This is one of Corby's favorite meals. And it makes for ahh-mazing leftovers!!


Friday or Saturday: Shrimp Tacos
{I will cook one night and the other we will eat out}


I would recap our weekend, but we did a whole lot of nothing. 
Corby worked on Saturday. I ran some errands. 

Sunday, we went to church and lunch, per usual. 
Then came home and decided to start watching Lost. Neither of us had ever seen the show and we're only 5 episodes in and we're hooked!

Encouragement

Makeup Must Haves

Happy Friday Eve!
This has been a busy week for me at work and I'm so ready for the weekend!

Today I'm going to share with you some of my makeup must haves!


1. Elf Mineral Face Primer $6.00 - This is the best makeup primer I've used. It makes my face feel super smooth without making it super oily! And for 6 bones, you can't beat it!

2. Clinique Superbalanced Mineral Powder $34.50 - I used to be a major bare minerals fan. But I think this stuff trumps bare minerals. It provides great coverage and it stays on well. I love that you grind your own powder, so you don't waste it. And it's SPF 15! Gotta protect your face from the sun!

3. Estee Lauder Bronze Goddess $32 - You may think $32 seems like a steep price to pay for bronzer. But one container will last you forever. I've had mine for months and I swear I haven't put a dint in it! I love the subtle shimmer that it adds to my cheeks! This is by far the best bronzer I've ever used.

4. Clinique Lash Doubling Mascara $15 - Best. Mascara. Ever. I have about 4 tubes of this mascara. I keep one in my purse, one in my makeup bag (duh), one in my desk at work and I always have a spare. I love this stuff!!

5. Elf Shimmering Facial Whip (in Toasted) $1.00 - This stuff is the bomb.com. I use it as a highlighter for my cheek bones. But it can be used on your eyelids, lips or anywhere really! Any yes, it really is only $1!!

6. Victoria's Secret Sparkle Liner $7 (in Nightlight) - I've been using this eyeliner for years. And it's the only kind I use. I love the sparkle that it has and it goes on so easy and stays all day! It's $7 but Vickie's offers either 2 for $12 or 4 for $20 (mix and match with other beauty items). The only negative about this eyeliner is that it's a pencil liner so it has to be sharpened.

7. Urban Decay Naked Palette $50 - This is still very new to me, but I am obsessed! I love every one of the colors in the palette and I think its just good quality eye shadow! I think it stays on really well (I use smashbox photo finish lid primer). Sidecar, Naked and Darkhorse are my favorites.


As a bonus, here are some of my must have haircare products. My hair is not easy to control. My hair is baby fine and has this awful natural wave. And since it's so fine, it doesn't take long for it to get super oily. And my flyaways are ridiculous!!

1. Kenra Platinum Working Spray 14 $22 - This is the best hairspray I've ever used. And I've used many different types of hairspray. This holds my hair in place without my hair feeling hard or sticky. My cousin works a nice salon up here and she recommended it to me. And I trust her judgement 100%. 
2. Johnson's No More Tangles $3.50 - As I explained earlier, I have baby fine hair. And my baby fine hair tangles soooo badly. So I use this baby (very fitting, I know) detangler. I love the way it smells and it makes my hair super soft while conditioning my hair!

3. Fekkai Beach Waves $25 - I found about this gem of a product thanks to our favorite Bargain Blonde. And ya'll, I LOVE this stuff. It really helps make my unmanageable waves nice and beachy. It makes for an easy hair style. I can spray some of this in my towel dried hair and just walk out the door. Perfection.

4. Redken Guts 10 $16.50 -  This is the best root lifter/volumizing spray foam around.This stuff really helps give my roots a boost and prevents my baby fine hair from looking super flat. 

I am by no means a beauty expert. I learn by lots of trial and error. And now that I'm almost 27 years old, I think I've finally figured out how to do my hair! :) That's progress, people!

*I've been scouring Pinterest for shower and various wedding ideas for my bff's wedding!
I realllyyyy wish Pinterest would have been around when Corby and I were planning our wedding. So many amazing ideas :) But I am loving all the available ideas for wedding showers!

*I found a new photo editing app on my iPhone that I love... It's called PicFX.

*Since the weather is getting warmer, there is seriously nothing better than peach ice cream. Especially if that peach ice cream is Blue Bell!

*Last night we grilled out for the first time since last summer. And it was delish!

Vacation Ideas

Summer is just around the corner.
And our 2nd wedding anniversary is quickly approaching...

Sooo, we think it's time to start planning our next vacation!!

Weekend in Photos

Ahh Monday.. We meet again!
How was your weekend?! 
Ours was fairly relaxing. 

Friday night we went to dinner and then came home and relaxed. 

Saturday, we drove up to Allen to go to the outlet mall. We got some good stuff!!
Some of our loot: two shirts from JCrew, a sweater from Gap and new sandals from American Eagle. Corby got some new golf shirts from Under Armor and a jacket from JCrew.

Once we got back to Fort Worth, we were starving. So we headed over to the Love Shack and enjoyed one of the best burgers in Fort Worth on the patio. It was an absolutely perfect day.

Yesterday, we had plans of getting up and going to church, but when I woke up yesterday, I had the worst sinus headache and my chest was so congested. Stupid allergies have turned into an upper respiratory infection. :(  So we decided to sleep in and just get some good rest yesterday.

Honestly, that rest was much needed.

This weekend, I finished the third {and final} book in the Fifty Shades Trilogy.

And ya'll, I don't remember the last time I was that sad about a book ending. I didn't want the story to end. I wanted more. But, I must say, I was pleased with the way it ended. The books are sooooooo good. One of my new favs, for sure! If you haven't read them, do it!
I read all 3 books last week. {Sad, I know}

Now I need suggestions on a new book to read. Any ideas?

That pretty much sums up our weekend. It was so nice to have a whole weekend to spend some quality time with my husby. It's been months since we've had a whole weekend to ourselves!!!

You may be wondering... What the heck is Muster?
Well, let me explain...

" Aggies gathered together on June 26,1883 to live over again their college days, the victories and defeats won and lost upon the drill field and in the classroom. By April 21, 1903, this annual gathering evolved into a celebration of Texas' Independence on San Jacinto Day. These early meetings included field games and banquets for Aggies to reflect and celebrate their memories of Aggieland. 'Let every alumni answer a roll call' wrote the former students. It was not until 1922, however, that April 21 became the official day of events for all Aggies, thus, the annual tradition of Muster was born. The March 1923 Texas Aggie urged, 'If there is an A&M man in one-hundred miles of you, you are expected to get together, eat a little, and live over the days you spent at the A&M College of Texas...

Muster is celebrated in more than four-hundred places world wide, with the largest ceremony on the Texas A&M campus in College Station. The ceremony brings together more Aggies, worldwide, on one occasion than any other event.
...Each Campus Muster is dedicated to the fifty-year reunion class. The Campus Muster involves an entire day of activities for students both present and past. Alumni enjoy a special program including tours of the ever-changing campus... That night, the Muster ceremony consists of an address by a keynote speaker, the reading of poems, followed by the Roll Call for the Absent. The Roll Call honors Aggies that have fallen since the last Muster roll was read. As the names are read, a friend or family member answers 'Here', and a candle is lit to symbolize that while those Aggies are not present in body, they will forever remain with us in Aggie Spirit..."

Recipe & Photo Dump

Hello, lovelies :)

I am loving today! It's a cloudy day with a high of 65! Tonight the temps are supposed to dip down in the 40s! This is almost unheard of in late April in Texas. And I'm completely ok with it! We will have plenty of heat in the next 5-6 months.

The only thing that would make today better, is if I was home, 
curled up in bed, reading my book.
Speaking of, I finished Fifty Shades Darker yesterday. And started Fifty Shades Freed last night. I should be done with the series this weekend. :)

I finally broke down and splurged on this lovely. And I have to say, that I may very well be worth every penny. 

I'll wrap this post up with a recipe for a yummy spring treat!!

Lemon Blueberry Cupcakes


INGREDIENTS: 
For the Cupcakes:
¾ cup plus 2 tbsp. all-purpose flour, divided
¾ cup cake flour
1½ tsp. baking powder
¼ tsp. salt
8 tbsp. unsalted butter, at room temperature
¾ cup plus 2 tablespoons sugar
Zest of  1 lemon
2 large eggs, at room temperature
1 tsp. vanilla extract
2 tbsp. lemon juice
½ cup plus 2 tbsp. milk, at room temperature
1 cup fresh blueberries

For the Frosting: 
8 oz. cream cheese
5 tbsp. unsalted butter, at room temperature
3 cups confectioners’ sugar, sifted
1 tbsp. freshly squeezed lemon juice
Zest of 1 large lemon
Additional fresh blueberries, for garnish

DIRECTIONS:

For the Cupcakes:
Preheat the oven to 350˚ F. Line cupcake pans with paper liners. In a medium bowl, combine the ¾ cup all-purpose flour, the cake flour, baking powder and salt; whisk together and set aside. In the bowl of an electric mixer, combine the butter, sugar and lemon zest. Beat together on medium-high speed until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, blending well after each addition. Beat in the vanilla and lemon juice. With the mixer on low speed, mix in half of the dry ingredients just until incorporated. Blend in the milk. Mix in the remaining dry ingredients, beating just until incorporated.

In a small bowl, toss the blueberries with the remaining 2 tablespoons of all-purpose flour. Using a spatula gently fold the berries into the cake batter. Divide the batter evenly between the prepared liners, filling each about ¾ full. Bake 20-22 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pans 5 minutes, then transfer to a wire rack to cool completely.

For the Frosting:
To make the frosting, combine the cream cheese and butter in the bowl of an electric mixer. Beat on medium-high speed until well combined and smooth, about 2-3 minutes. Mix in the lemon juice and lemon zest. Gradually beat in the confectioners’ sugar until totally incorporated, increase the speed and then beat until smooth. Frost cooled cupcakes as desired. (I used a large, unlabeled star tip to frost these cupcakes.) Garnish with fresh blueberries.
